I wanted to refresh myself and teach the girls about canning tomatoes. We ordered a 20 lb box of tomatoes from the Bountiful Baskets Co-op. February seems like an odd time to can but when the price is right, is the best time ;o) We started Monday on the experiment. We ended up only processing half, about 10 lbs, because that much filled my pot. It was a good experience, one jar the first day didn’t seal, so that went into the fridge. We did the rest on Wednesday. So Monday we did 4 quarts and Wednesday we did 9 pints. We’re looking forward to homemade salsa with it. Yum, yum. For reference I figured it cost $.50 a pint to do.
